The way I see it, God could've aided in creating the vaccine and distributing it. The vaccine *is* God's work, it *is* His way of taking care of it, and by not taking it you're ignoring all the work He did or whatever. These people have some other, probably stupider, reason to not take it, and are justifying it with religion because it can be hard to argue against.
The way I've heard it explained is like this: there's a drowning man who is approached by several boats and when they ask if he needs help, he tells them God will help him. The man dies and in heaven, he asks God she he didn't save him. God replied that he tried, but the guy turned away all the boats He sent him.

Any religion that has anything close to an all powerful God, that interacts with our lives, is begging for people to behave irrationally. Because nothing is irrational if you believe an all powerful God wants you to do something/will reward you for it.
Believing in the existence of God is really hard. Lack of evidence and all that. But if you get past that part, the rest is easy. It's just a tiny, much smaller belief, that God wants you to do something, and suddenly it is perfectly reasonable to do *anything*.
God can eliminate COVID right now. God can cure me of anything. God can bring back my dead spouse. God can flood the Earth, fix climate change, everything. Anything.
Believing God wants me to not get vaccinated is a million times easier than believing God exists. And no amount of contradictory evidence would sway me. God's opinion is more important than anything else. Science is nothing to God. The law is nothing to God.
If I believe in God, ANYTHING is reasonable if it's what God wants us to do.

The argument shows that if you believe in God, there are high chances you will do a lot of irrational things such as not doing any covid prevention methods because "God will protect me, so I don't need all of these stuff". Can you see how it harms people if everyone start believing that God will protect them from a disease even if they don't take preventative measures?
